Schnitzel - i buy a variety of meats like chicken, veal & pork, the butcher will slice them thin & smash them for you. You beat a couple eggs, add chopped garlic, parsley, salt & pepper. Throw in the meats & then crumb them in breacrumbs, or that crunchy japanese breadcrumbs. You can freeze portions too.

Bolognaise the same, make a big batch & freeze. Less mess & healthy. You can always add a bit of ricotta when serving as it goes nice with the sauce.

I always make meat balls, shred in whatever veggies you like, add egg salt & pepper, garlic & onion bit of breadcrumbs & make your meatballs, fry them or cook them in a tomato base sauce. Freeze them in balls for next time too. If you want, buy some puff pastry & roll in your mixture & cut them up & iin the oven like a sausage roll.
