Amazingly I am going to say Risotto!
I always loved ordering this out but was to scared by friends horror stories to make it. I then found on a very popular Australian recipe website Oven baked risotto.
Essentially it is cooking cooking the risotto base in the oven, and then adding any extra's in after its cooked. I usually will cook up some pumpkin in a steamer while the risottos base is cooking in the oven and add some peas. Although most recipes call to cook the chicken while the risotto mix cooks in the oven, I do this first and add it in to the oven mix to allow for the flavours to develop.
Once you've got the basic idea you can start mixing it up with mushroom risotto with a bit of pancetta and spinach or any thing else.

Pop it into google, not only will you get an awesome meal, you partner will be pretty chuffed by the restaurant quality that comes out.
