Hello Des, I'm a native New Yorker so I know a few places that might be interesting. I'm not sure how much of the typical tourist stuff you'd like to do, but I'll mention a dozen of the places I have brought my friends when they visited from abroad.
Times Square, Empire State Building, Ellis Island, Central Park, MoMA, Metro Art, Statue of Liberty, Grand Central Terminal, Rockefeller Center, Yankees/Mets/Ducks game, Jets/Giants/Dragons game, Islanders/Rangers game.
Check out the different areas too, China town, Little Italy, a former German town. Also, be sure to go to Brooklyn, Queens, Bronx, and Staten Island. You can potentially spend the whole time in Manhattan, but there's a lot of NYC left in the other 4 boroughs.
