Just wondering if anyone has some nice recipes cooking with chicken. With a variety of food allergies - red meat, seafood, avocado, turkey & other vegetables- I'm finding it very restrictive to come up with fresh ways of cooking chicken. Any help would be greatly appreciated.

Hi kfactor, It's me again I hope these recipes are helpful.
Piquant Chicken.............................................................................Serves 6.
2 tablespoons (40g) butter.
1 1/2 kg chicken pieces.
1/2 cup (180g) honey.
1/2 cup (125ml) water.
1/4 cup (65ml) melted butter.
1/4 cup (65ml) lemon juice.
1 teaspoon ground ginger.
1./ Melt the butter in a large frypan. Brown the chicken on all sides.
2./ Mix together the honey, water, melted butter, lemon juice and ginger. Pour over the chicken.
3./ Cover and cook over a low heat, basting occasionally, for 35-40 minutes or until chicken is tender.

Parisienne Chicken.-----------------------------------------------------------Serves 6.
6 Chicken Breasts.
1 cup currant jam.
1 tablespoon cornflour.
1 cup (250ml) water.
1/4 cup lemon juice (65ml).
2 tablespoons Worcestershire sauce.
2 teaspoons mixed spice.
2 teaspoons salt.
1 teaspoon pepper.
1./ Place chicken breasts in a shallow baking dish.
2./ In a saucepan, mix together the jam, cornflour, water, lemon juice, Worcestershire sauce, mixed spice, salt and pepper. Bring to the boil, reduce heat, and simmer for five minutes.
3./ Pour the sauce over the chicken and bake uncovered in a 230*c (450*f) oven for 15 minutes. Reduce heat to (190*c---375*f) and cook for another hour or until chicken is tender. Baste frequently.

Here is another one I hope you like.-----------Crispy Parmesan chicken....Serve 4
8 chicken drumsticks, skin removed.
Flour.
1 egg mixed with 2 tablespoons milk
1 cup crushed cornflakes.
1/2 cup COON parsley & garlic flavoured shredded cheese.
2 Tablespoons KRAFT Grated parmesan cheese.
2 tablespoons chopped parsley.
1./ Coat chicken in flour and egg mixture.
2./ Combine cornflakes,cheeses and parsley and roll drumsticks in crumbs until well coated.
3./ Bake at 200*c for 35-40 minutes or microwave on HIGH for 2-3 min or until chicken is cooked.

Hi once more kfactor:--------------Spicy Chicken Tacos.----------------Serves 4.
8 chicken drumsticks, skin removed.
1 x 35g pkt Taco seasoning mix.
1/2 cup natural yoghurt.
1 x 75g pkt corn chips crushed.
1 cup COON Tomato, Onion and chilli flavoured shredded cheese.
1./ Roll chicken in seasoning mix, brush with yoghurt and coat with corn chips and cheese. Refridgerate for 30 min. Bake at 200*c for 30-45 min, or microwave on HIGH for 2-3 min or until chicken is cooked.

Hi kfactor,I hope some of these dishes help you.
Sticky Sesame Chicken Legs:- Serves 6-------Time 1hr 30 min.
Place 1.8kg drumsticks into a lined baking dish. Combine1 cup honey, 1/2 cup each soy sauce and sweet sauce and 2 teaspoons sesame oil, pour over chicken. Stand for 10 minutes. Bake at 180*c (160*c fan-forced) for 1hour, turning every 10 min until golden brown. Cool for 15 min and turn to coat in the pan juices. Sprinkle with sesame seeds to serve

I have a yummy recipe for chichen - for every 1 to 1.5kgs chicken pcs add the following combined ingredients - 1 cup tomato sauce, 1 tspn mustard powder, 1 tspn minced garlic (or 1 fresh garlic clove), 1 tablespoon honey & a GOOD splash soy sauce. For a change, instead of using tomato sauce, use BBQ sauce & then it's just like Chinese BBQ Chicken. Serve with rice. Hope you like it & that you can adapt to your allergies!

Hello,

The other day I made Moroccan chicken. I found the recipe in taste.com.au
It was my first time cooking Moroccan and using different spices. Although I added mushrooms and zucchini aswell. The outcome was fantastic. I would cook that again anytime. And the family loved it too.
