So what's with the diamond ring?
Other than the beauty of a diamond, what makes the diamond any more special than other gems such as a ruby, emerald, amethyst, topaz, etc?
Perhaps you were to get the partner their birthstone set in a ring. Would that not be more significant as it has more meaning?
As a society, does price say more than they actual symbolism of the token? Culturally no, stereotypically yes?

Were my partner to give me a diamond ring I would be highly insulted. I have made my thoughts on diamonds (and roses) quite clear. Sure, some are nice but to me they are cold and unattractive.
Instead I wear a beautiful saphire ring (also my birthstone) left to me by my mother as a symbol of our commitment to each other. It is regarded as an engagement ring by others even though my partner and I know we are unlikely to marry.
My daughters wear beautiful diamond engagement rings and have in some instances for years. Only 1 is married.
On the other hand I refuse to wear pearls as they are considered unlucky by some.
