I love NZ especially the Coromandel but out of the overseas countries I would have to say Rarotonga in the Cook Islands. Friendly people, beautiful lagoon, and good restaurants.
Fiji would be a close second but the political situation makes it dangerous. I was there during the second coup and it was very unnerving.
For something different Niue is great but a week is probably plenty.
It is best in Bali to stay away from Kuta for safety reasons as well as to see the real Bali. Lombok is a good option.
I have also lived on Praslin Island in the Seychelles. If this is your choice you need to be on the East side of the island at either Cote D'or, Anse Lazio or Anse Takamaka as those are about the only beaches that are deep enough to swim in. Also they don't have the seaweed that gets washed up making swimming unpleasant
