Additives to Milk

Wonder what started the fad anyways? Milk does need to be pasteurized, but all the other treatments are probably not necessary at all. Like decaffeinated anything - the process and chemicals used to remove the caffeine is more unhealthy that the product itself. So what goes into the milk to change its state?
I am dairy intolerant, so I drink some lactose free milk, but mostly soy based drinks. Not a clue what I am ingesting there, but it does not cause the problems that animal milk does.
