Discussion: Microwave oven recipes.
Hi. I recently purchased a microwave. Does any one have any simple, cheap recipes they would like to share. I am particularly interested in meals for two people but even if the recipe is for a larger amount I'm still interested. Looking forward to your favourite microwave recipes.

Hi Hilary. Hope these help.
Stewed Lamb Shanks:---------------------------------------------------Serves 6..
1/4 cup (65ml) vegetable oil
6 Lamb shanks.
3 tablespoons plain flour.
2 cups (500ml) chicken stock.
2 tablespoons tomato paste.
2 small onions sliced.
500g tomatoes quartered.
2 cloves minced garlic.
250g carrots, sliced.
salt & pepper.
1./ Heat the oil in a large frypan on a conventional stove. Add the lamb shanks and brown on all sides Put the shanks in a glass or ceramic casserole dish.
2./ Stir the flour into the oil in the frypan stirring up any scrappings from the bottom of the pan. Add the chicken stock and tomato paste, stirring until smooth.
3./ Add the onions and tomatoes, garlic and carrots. Mix well then pour over the lamb shanks. Cover and cook in the microwave for about 45 minutes or until the lamb shanks are tender. Season to taste with salt and pepper.
