My always works recipe is brown some onions and casserole beef and add chopped vegies like carrot, parsnips, aubergine etc when the slow cooker starts to look full I add a quarter bottle of red wine and 2 cups of beef stock - the real trick here is to go overboard with the herbs as for some reason they tend to loose there flavour in the slow cooker. A good handful of rosemary, 3 cloves of garlic and some thyme add the herbs you fancy, salt and pepper and about 2 hours before its ready add some sliced pepper. Do this towards the end otherwise it reduces to nothing.
